Quiche is such a simple and versatile thing. Here are my basics:
- 3, 4, or 5 eggs
- 1 – 2 cups half & half
- 1 – 2 cups cheese
- fillings of choice
- salt and pepper
- one single pie crust
Combine the top ingredients, pour into the pie crust and bake at 350 F for 50 minutes.
The interesting bit is the filling. A few ideas:
- crumbled cooked bacon and spinach with swiss cheese
- broccoli florets with cheddar cheese
- sauteed mushrooms and onions with gruyere cheese
- dried tomatoes and sauteed mushrooms with cheddar
You can also make mini quiches in a muffin pan or mini-muffin pan, for appetizers.
