Chicken Salad

4 C cubed cooked chicken (about 1 ¾ pound)
1 C walnuts, toasted, chopped
1 celery rib, chopped (1 cup)
2 Tbsp finely chopped shallot
2 C halved seedless red grapes
¾ C mayonnaise
3 Tbsp tarragon vinegar
2 Tbsp finely chopped fresh tarragon
½ tsp black pepper
½ tsp salt

Toss together all ingredients in a large bowl until combined well.

Notes from Mom:  I use pecans instead of walnuts sometimes. You can also use red or green grapes as long as they are seedless. Chopped red bell pepper is another addition/substitution.
