Meatloaf

1 to 2 lbs of ground meat (all hamburger or mix of hamburger/sausage/veal/ turkey)
½ onion, chopped
1 carrot, peeled, chopped
2 whole cloves garlic, chopped
½ red bell pepper, chopped
One-inch thick bread or crackers
¼ to ½ C milk or cream
1 egg
1 Tbsp parmesan cheese
½ tsp ground black pepper
1 Tbsp Worcestershire sauce
½ tsp dried dill
1 tsp lemon juice
1 tsp dried thyme
1 ½ tsp sea salt

Preheat oven to 350 degrees F.

Saute all the vegetables in a little oil or butter. Place bread in bottom of large mixing bowl. Pour enough milk over to soak it. Add sautéed onions, seasonings, egg, and ground meats. Mix thoroughly with hands. Shape into a loaf and place on foil on a rimmed cookie sheet, or place in loaf pan, or divide into muffin tins. Layer top with sliced tomatoes, bacon, cheese, or ketchup.

Bake until cooked in center (155o with meat thermometer). Two pounds of meat in one loaf takes about 1 ¼ to 1 ½ hours to cook; one pound takes about an hour. Muffin meatloaves take about 30 – 45 minutes to cook.

Note: If I have a half cup of leftover veggies, I will chop them up and toss them in. Chunks of cheese can be mixed in, too.
