This recipe is from The Silver Palate cookbook and goes with their Technicolor Bean Salad.
- 1 egg yolk
- 1/3 Cup red wine vinegar
- 1 Tablespoon sugar
- 1 Tablespoon chopped garlic
- Salt and freshly ground black pepper
- 1 Cup quality olive oil
Combine egg yolk, vinegar, sugar, garlic, and salt and pepper in the bowl of a food processor fitted with a steel blade. Process briefly. With motor running, slowly dribble in the olive oil. Taste and correct seasoning if necessary. Makes about 1 1/2 cups. Store covered in refrigerator.
