Roast Potatoes

For 4 servings

  • 2 lb potatoes (russets work well)
  • 2 Tablespoons olive oil
  • 2 – 3 Tablespoons rosemary
  • salt and pepper

Cut potatoes into wedges about 1/3″ thick and pat dry on a clean dish towel.  Put into a rimmed baking sheet, sprinkle with the olive oil and seasonings. Mix with your hands to make sure all are coated, then spread out into a single layer.

place in preheated 400 degree F oven and roast for 30 minutes, turning once.
