Ramen Noodle Salad

  • 1 bag coleslaw mix (8 oz)
  • 1 pkg ramen noodles, raw & broken into small pieces
  • 1/2 C roasted sunflower seeds
  • 1/2 C broccoli florets (cut these small)
  • 1/4 C raisins
  • 1/2 C olive oil
  • 1/4 C cider vinegar
  • 2 Tbs honey

Combine the ramen noodle seasoning packet (if you don’t want to use this, substitute salt and pepper), oil, vinegar, and honey.  Mix everything else in a bowl. Pour the dressing over and mix well. Refrigerate at least 1 hour.

Good “make ahead” salad.
