Sweet, salty, and tangy. The dressing makes it. Don’t overdo the bitter arugula.
- 1 small watermelon, rind removed, cut flesh into 1/2″ cubes
- 6 oz. feta cheese, cubed into 1/4″ cubes
- 1 bunch arugula
- 3/4 Cup olive oil
- juice of 1 lime (2-3 T)
- 2 Tablespoons rice wine vinegar
- 2 teaspoons fresh thyme
- 1 small shallot
- salt and pepper
Combine well in a food processor (I used the little Ninja). If you don’t have such a device, just chop up the thyme and shallot and shake everything together.
Place a layer of arugula in salad dish, pile on watermelon and feta cubes. Drizzle with dressing.
