Watermelon and Feta Salad

Sweet, salty, and tangy. The dressing makes it. Don’t overdo the bitter arugula.

  • 1 small watermelon, rind removed, cut flesh into 1/2″ cubes
  • 6 oz. feta cheese, cubed into 1/4″ cubes
  • 1 bunch arugula

For Dressing:

  • 3/4 Cup olive oil
  • juice of 1 lime (2-3 T)
  • 2 Tablespoons rice wine vinegar
  • 2 teaspoons fresh thyme
  • 1 small shallot
  • salt and pepper

Combine well in a food processor (I used the little Ninja). If you don’t have such a device, just chop up the thyme and shallot and shake everything together.

Assemble salad:

Place a layer of arugula in salad dish, pile on watermelon and feta cubes. Drizzle with dressing.

Optional garnishes:

  • lime wedge
  • sliced serrano chili
